  • 1/4 cup pumpkin puree

  • 1 teaspoon baking soda
  • 3 ounces pumpkin spice instant pudding mix
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • Topping: 2 tablespoons granulated sugar + 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F. Line two large baking sheets with parchment paper.
  2. In a stand mixer, cream together the softened butter, light brown sugar, and granulated sugar until smooth. Beat in the egg, then add pumpkin puree and vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, pudding mix, cinnamon, pumpkin pie spice, and salt. Gradually combine the dry mixture with the wet ingredients until just mixed. Stir in white chocolate chips.
  4. Using a cookie scoop, drop dough onto prepared baking sheets. Sprinkle each cookie ball with cinnamon sugar topping. Bake for 10 minutes. Allow cooling on the baking sheets before serving.
