  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple)
  • ½ cup all-purpose flour (for streusel)
  • ¼ cup packed light brown sugar (for streusel)
  • ¼ teaspoon ground cinnamon (for streusel)
  • ¼ cup unsalted butter, cold and cut into small pieces (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, mix together flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the egg, milk, melted butter, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients and stir until just moistened; a few lumps are okay.

  7. Divide batter evenly among the muffin cups and top generously with streusel.

  9. Cool muffins in the pan for a few minutes before transferring to a wire rack.
