  • 1 1/2 cups fresh breadcrumbs
  • 3 tablespoons milk
  • 1/2 cup finely minced onion (divided)
  • 4 garlic cloves, minced (divided)
  • 1 tablespoon chopped fresh sage (divided)
  • 1 tablespoon chopped parsley
  • 1 1/2 teaspoons Italian seasoning (divided)
  • 1/2 cup grated parmesan cheese (divided)
  • 1 large egg + 1 yolk
  • 1 1/2 pounds ground turkey (93/7 lean to fat)
  • 1 3/4 cups chicken stock
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • Olive oil or avocado oil for frying

Instructions

  1. Soak breadcrumbs in milk for 3 minutes. Mix with half the onion, garlic, sage, parsley, Italian seasoning, parmesan, egg, and yolk.
  2. Add ground turkey, salt, and pepper; mix gently until combined. Form into meatballs and chill for 20 minutes.
  3. Heat oil in a skillet; brown meatballs on all sides until cooked through (165°F). Set aside.
  4. In the same skillet, melt ghee/oil; sauté remaining onion for 2 minutes. Add garlic and Italian seasoning; cook until fragrant.
  5. Stir in pumpkin puree, salt, pepper, and chicken stock; simmer for a few minutes. Whisk in remaining parmesan, heavy cream, maple syrup, and sage.
  6. Return meatballs to sauce; heat through. Serve over pasta or mashed potatoes.
