Ingredients

  • 8 ounces pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced into rounds)
  • 2 cups cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons olive oil
  • ¼ cup fresh basil (chopped)
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve ½ cup pasta water before draining.
  2. In a skillet, heat 2 tablespoons olive oil over medium heat and sauté the zucchini for 3-4 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, add the remaining tablespoon of olive oil and minced garlic; sauté for 30 seconds. Add halved cherry tomatoes and a pinch of salt; cook for 5-7 minutes until softened.
  4. Return zucchini to the skillet; add cooked pasta and toss to combine. If dry, add reserved pasta water gradually.
  5. Stir in chopped basil, season with salt, black pepper, and red pepper flakes if desired.
  6. Serve warm with grated Parmesan cheese as a garnish.
