  • 1 lb ground beef
  • 1 ¾ cups beef broth
  • 1 tablespoon olive oil
  • 28 oz can fire-roasted crushed tomatoes
  • 15 oz can red kidney beans (drained and rinsed)
  • 15 oz can pinto beans (rinsed and drained)
  • 1 medium yellow onion (chopped)
  • 3 tablespoons tomato paste
  • 1½ teaspoons garlic (minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Toppings: shredded cheddar cheese, sour cream, green onions, cilantro

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add chopped onion and sauté for about 2 minutes until softened.
  2. Add ground beef and cook until browned, breaking it up as it cooks (about 5 minutes). Drain excess fat.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Mix in chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste until well combined.
  5. Pour in beef broth; scrape any bits from the bottom of the pot. Add crushed tomatoes and both types of beans.
  6. Bring to a boil then reduce heat to simmer for 1 to 2 hours, stirring occasionally. Cover for the first part of cooking; uncover during the last 30 minutes to thicken.
  7. Serve hot with desired toppings.
