  • ½ pound pancetta, diced
  • 3 medium shallots, thinly sliced (about 1 cup)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 ripe pear, diced
  • 1 lemon, zested and juiced (about 3 tablespoons juice, 1 teaspoon zest)
  • ½ cup parsley, roughly chopped
  • Freshly ground black pepper to taste

Instructions

  1. Prepare the pear by peeling and dicing it. Toss with lemon juice in a small bowl and set aside.
  2. In a large skillet over medium heat, cook the pancetta until golden brown. Use a slotted spoon to remove it to a paper towel-lined plate. Leave about 3 tablespoons of fat in the pan.
  3. Add sliced shallots to the skillet and sauté for about one minute until softened. Stir in the Dijon mustard.
  4. Add the frozen peas and diced pears to the skillet; stir for about 5 minutes until heated through.
  5. Turn off the heat and mix in half of the pancetta, parsley, and black pepper.
  6. Transfer to a serving bowl, top with remaining pancetta, and garnish with lemon zest.
