  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese, softened
  • 1½ cups baby spinach, chopped
  • 1½ cups shredded Colby Jack cheese
  • ½ cup salsa
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn or flour tortillas
  • Vegetable or canola oil for frying

Instructions

  1. Heat ½ inch of oil in a saucepan over medium heat until it reaches 350 degrees F.
  2. In a large bowl, combine shredded chicken, cream cheese, chopped spinach, Colby Jack cheese, salsa, and sour cream. Season with salt and pepper to taste.
  3. Spread a few tablespoons of the filling onto the center of each tortilla. Roll tightly and place seam-side down in the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
  4. Repeat until all tortillas are filled and fried.
  5. Serve warm with toppings like shredded lettuce, chopped tomatoes, sour cream, or Pico de Gallo.
