  • 2 sweet potatoes, quartered (1 pound each)
  • 1 large tart apple, peeled and cored
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 1 bay leaf
  • 5 cups chicken broth
  • 1 cup cream
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • 1 cup crumbled goat cheese or feta cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place quartered sweet potatoes and apple on a greased baking sheet. Roast for 40 minutes until tender.
  3. Cool slightly and peel the sweet potatoes.
  4. In a soup pot, heat olive oil over medium heat. Sauté onion, celery, carrot, and bay leaf until tender.
  5. Remove the bay leaf. Add chicken broth, roasted sweet potato, and apple to the pot.
  6. Blend until smooth using an immersion blender or regular blender.
  7. Stir in cream, lemon zest, and juice. Season with salt and pepper to taste.
  8. Heat gently without boiling.
  9. Serve in bowls topped with crumbled cheese.
