  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon rice vinegar
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • Skewers (wooden or metal)

Instructions

  1. In a large bowl, mix sweet chili sauce, soy sauce, honey, sesame oil, garlic, ginger, and rice vinegar to form the marinade.
  2. Add chicken pieces to the marinade; coat well. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. Preheat the grill or grill pan over medium-high heat.
  4. Prepare vegetables by cutting bell pepper and onion into chunks.
  5. Thread marinated chicken and vegetable chunks onto skewers alternately.
  6. Grill skewers for 10-15 minutes, turning occasionally until chicken is cooked through and has grill marks.
  7. Let skewers rest for a few minutes before serving.
