  • 1 onion, diced
  • 3 jalapeño peppers, seeds removed and diced
  • 6 ears corn, kernels cut from cob
  • 6 to 8 cloves garlic, minced
  • 2 pounds ground chicken
  • 3 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon cumin
  • 4 cups chicken broth
  • 3/4 cup beer (optional)
  • 1 cup sour cream
  • 1 cup cilantro, chopped
  • 3 tablespoons lime juice

Instructions

  1. In a large soup pot over medium heat, add olive oil, onion, jalapeños, corn kernels, salt, and pepper. Cook for 7 to 9 minutes.
  2. Stir in garlic, ground chicken, chili powder, paprika, cumin, and additional salt and pepper. Cook for another 7 to 9 minutes until chicken is cooked through.
  3. Pour in chicken broth and beer (if using), then add chicken base. Bring to a boil, reduce heat to medium-low, and simmer for 25 to 30 minutes.
  4. Add hot sauce, sour cream, cilantro, and lime juice; cook for an additional 5 to 10 minutes. Adjust seasoning as needed before serving with optional toppings like cilantro and crumbled cotija cheese.
