  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¾ cup strawberry jam
  • Sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In another bowl, beat together butter, granulated sugar, and powdered sugar until fluffy (3-4 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla and optional almond extract.
  5. Gradually mix in dry ingredients until just combined.
  6. Scoop dough into balls and flatten into discs. Create a well in the center of half the discs and fill with strawberry jam.
  7. Top with remaining discs, sealing edges with a fork.
  8. Bake for 10-12 minutes until edges are lightly golden. Cool on sheet for 5 minutes before transferring to wire rack.
  9. Optional: Drizzle icing made from powdered sugar and milk, then add sprinkles.
