  • 200 g crushed biscuits
  • 100 g melted butter
  • 500 g cream cheese
  • 200 g sugar
  • 1 tsp vanilla extract (alcohol-free)
  • 300 ml whipped cream
  • 300 g fresh strawberries, chopped
  • 2 tbsp vegan gelatin
  • 100 ml hot water

Instructions

  1. Preheat the oven to 180°C (350°F). Mix the crushed biscuits and melted butter until combined. Press the mixture into the bottom of a cake pan to form the crust. Bake for 10 minutes, then let cool.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Stir in the vanilla extract.
  3. Fold the whipped cream into the cream cheese mixture until well combined.
  4. Dissolve the vegan gelatin in hot water, let cool slightly, then mix into the cream cheese mixture.
  5. Gently fold in the chopped strawberries.
  6. Pour the mixture over the cooled crust and smooth out the top. Refrigerate for at least 4 hours until set.
  7. Decorate with fresh strawberries before serving. Carefully remove from the pan and serve chilled.
