  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons coconut water
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions, chopped (for garnish)
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, whisk together soy sauce, honey, coconut water, garlic, ginger, and sesame oil until well mixed.
  2. Add chicken pieces to the marinade; toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. If using wooden skewers, soak them in water for 30 minutes to avoid burning.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread marinated chicken onto skewers.
  6. Grill skewers for 10-12 minutes, turning occasionally until cooked through with a nice char.
  7. In a small saucepan, mix cornstarch and water to create a slurry; add the remaining marinade and simmer until thickened.
  8. Brush the thickened sauce over skewers during the last few minutes of grilling.
  9. Remove from grill and drizzle any remaining sauce on top; sprinkle with sesame seeds and green onions before serving.
