Spooky Spaghetti & Eyeballs is a fun and festive dish perfect for Halloween!   • 1 pound ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 tablespoon parsley flakes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces sliced provolone cheese
  • 2.25 ounces canned sliced black olives
  • 16 ounces dried spaghetti
  • 16 ounces marinara sauce

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with foil or parchment.
  2. In a bowl, combine ground beef, breadcrumbs, eggs, olive oil, parsley, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Roll mixture into 2-inch meatballs and arrange on the baking sheet.
  4. Bake meatballs for 18-20 minutes until golden brown.
  5. Cut provolone into circles. Place one circle on each meatball and top with an olive slice.
  6. Return to oven for an additional 2-3 minutes until cheese slightly melts.
  7. Cook spaghetti according to package instructions and heat marinara sauce in a separate pot.
  8. Toss cooked spaghetti with marinara and serve topped with eyeball meatballs.
