  • 150 g fresh spinach
  • 50 g pine nuts
  • 50 g grated Parmesan cheese
  • 100 ml olive oil

  1. Heat olive oil in a skillet over medium heat. Add the fresh spinach and sauté until wilted, then remove from heat to cool slightly.
  2. In a blender, combine the sautéed spinach, pine nuts, Parmesan cheese, garlic, olive oil, salt, and pepper. Blend until smooth to create the pesto sauce.
  3. Boil salted water in a large pot. Cook the gnocchi until they float to the surface, approximately 2-3 minutes.
  4. Drain the gnocchi and transfer them to the skillet with the pesto. Toss gently to coat the gnocchi evenly.
