Spinach Carbonara is a delightful twist on the classic Italian dish, featuring tender spaghetti enveloped in a creamy sauce enriched with fresh spinach and crispy turkey bacon. This quick and easy recipe combines the richness of eggs and cream, topped with savory parmesan, creating a comforting meal that’s perfect for weeknight dinners or special occasions.

  • 300 g spaghetti
  • 200 g fresh spinach
  • 150 g turkey bacon, diced
  • 2 large eggs
  • 100 ml crème fraîche
  • 50 g grated parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook spaghetti in salted boiling water according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  3. Stir in minced garlic and fresh spinach; sauté until wilted, about 2-3 minutes.
  4. In a bowl, whisk together eggs, crème fraîche, grated parmesan, salt, and pepper.
  5. Combine cooked spaghetti with the turkey bacon and spinach mixture in the skillet and remove from heat.
  6. Quickly pour egg mixture over the pasta, tossing rapidly to coat. The residual heat will gently cook the eggs.
  7. Serve immediately with extra parmesan if desired.
