  • 12 large mushrooms
  • 200 g fresh spinach
  • 150 g cream cheese
  • 100 g grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Breadcrumbs (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Clean the mushrooms and remove the stems; set aside the stems for stuffing.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until golden.
  4. Stir in the fresh spinach and chopped mushroom stems; cook until spinach is wilted.
  5. In a bowl, combine cream cheese, grated Parmesan, sautéed mixture, salt, and pepper.
  6. Stuff each mushroom cap with the cheese-spinach mixture.
  7. Optionally sprinkle breadcrumbs on top for added crunch.
  8. Arrange the stuffed mushrooms on a baking sheet and bake for 20 minutes or until golden brown.
  9. Serve warm and enjoy.
