  • 2 medium zucchinis, spiralized
  • 200 g beef, sliced thinly
  • 2 tbsp olive oil
  • 2 large eggs
  • 3 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp chili paste
  • 1 tsp sugar
  • 1 tbsp apple cider vinegar
  • 1 green onion, chopped
  • 1 carrot, julienned
  • Fresh cilantro for garnish
  • Crushed peanuts for garnish
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook the beef until browned, about 4-5 minutes.
  2. Push beef to one side and scramble eggs in the empty space until cooked; mix with beef.
  3. Add spiralized zucchini and julienned carrot to the skillet; stir well.
  4. In a small bowl, combine soy sauce, peanut butter, chili paste, sugar, and apple cider vinegar. Pour over the beef and veggie mixture in the skillet.
  5. Cook for another 2-3 minutes until zucchini is slightly tender.
  6. Remove from heat and stir in green onion.
  7. Serve hot, garnished with fresh cilantro, crushed peanuts, and lemon wedges.
