  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 oz sushi-grade tuna, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 teaspoon soy sauce
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1 carrot, shredded
  • 2 radishes, thinly sliced
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped
  • Seaweed sheets (nori), cut into strips (optional)

Instructions

  1. Rinse the sushi rice under cold water until clear. Drain well.
  2. In a medium saucepan, combine rinsed rice and water; bring to a boil. Cover, reduce heat to low, and cook for about 18 minutes until tender. Remove from heat and let sit covered for another 10 minutes.
  3. Mix rice vinegar, sugar, and salt in a bowl until dissolved; fold into the cooked rice gently. Let the rice cool to room temperature.
  4. In another bowl, mix diced tuna with mayonnaise, sriracha sauce, and soy sauce; adjust spice level to taste.
  5. To assemble, divide cooled sushi rice into bowls; top with spicy tuna mixture, avocado slices, cucumber, carrot, and radishes.
  6. Sprinkle with sesame seeds and green onions; add seaweed strips if desired.
  7. Serve immediately and enjoy!
