  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese

  • 1 jalapeño pepper, seeded and finely chopped
  • Juice of 1 lime
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cream cheese, mayonnaise, and lime juice until smooth.
  2. Add the grilled corn, cotija cheese, cilantro, jalapeño, chili powder, and smoked paprika. Mix well.
  3. Season with salt and pepper to taste.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve with tortilla chips or fresh veggies.
