  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1/4 cup apple vinegar
  • 1 tbsp agave syrup + juice of 1 lime
  • Corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent (about 5 minutes).
  2. Add garlic and jalapeño; cook for another 2 minutes.
  3. Stir in shredded beef, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Pour in chicken broth, apple vinegar, and agave-lime mixture; stir well and bring to a simmer.
  5. Cover and reduce heat to low; cook for 1.5 to 2 hours until beef is tender.
  6. Shred the beef in the skillet using two forks to mix with juices.
  7. Warm corn tortillas in another skillet or grill for seconds on each side.
  8. Assemble tacos with pulled beef; garnish with cilantro and serve with lime wedges.
