  • 400 g chickpeas (soaked overnight)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bunch fresh parsley, chopped
  • 1 bunch fresh coriander, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 tbsp chickpea flour
  • 1 tsp salt
  • Oil for frying

Instructions

  1. In a food processor, combine drained chickpeas, onion, garlic, parsley, coriander, cumin, paprika, cayenne pepper, chickpea flour, and salt. Blend until slightly grainy.
  2. Transfer to a bowl and refrigerate for 30 minutes to allow flavors to meld.
  3. Heat oil in a deep skillet over medium heat. Form the mixture into small balls.
  4. Fry the falafel in batches until golden brown and crispy, about 4-5 minutes per side.
  5. Drain on paper towels to remove excess oil.
  6. Serve warm with tahini sauce or spicy yogurt dip.
