  • 200 g tortilla chips
  • 2 ears fresh corn, grilled and kernels removed
  • 150 g shredded cheddar cheese
  • 100 g crumbled feta cheese
  • 1/2 cup sour cream
  • 1 jalapeño, sliced
  • 1 tbsp mayonnaise
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Spread tortilla chips evenly on a baking sheet.
  3. Top chips with grilled corn.
  4. Sprinkle cheddar and feta cheeses over the corn.
  5. In a small bowl, mix sour cream, mayonnaise, smoked paprika, chili powder, lime juice, salt, and pepper until smooth.
  6. Drizzle the sour cream mixture over the nachos.
  7. Add jalapeño slices on top.
  8. Bake for about 10 minutes or until the cheese melts and bubbles.
  9. Remove from the oven and garnish with fresh cilantro before serving.
