  • 4 large bell peppers (any color)
  • 1 lb beef chorizo
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or a blend)
  • Fresh cilantro, for garnish (optional)
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes (canned or fresh)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Add the beef chorizo to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  4. Stir in the cooked rice, black beans, corn, diced tomatoes, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well and cook for another 5 minutes to combine the flavors.
  5. Remove the skillet from heat and stir in half of the shredded cheese.
  6. Spoon the chorizo mixture into each bell pepper, packing it tightly. Place the stuffed peppers upright in a baking dish.
  7. Sprinkle the remaining cheese on top of each stuffed pepper.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
  9. Remove from the oven and let cool slightly before serving. Garnish with fresh cilantro if desired. Enjoy your spicy chorizo stuffed peppers!
