Spicy Chicken Quesadillas offer a delightful fusion of flavors, perfect for a quick lunch or dinner.   • 2 flour tortillas
  • 200 g diced chicken breast
  • 1 sliced red bell pepper
  • 1 sliced onion
  • 1 diced jalapeño (adjust to taste)
  • 150 g shredded cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and red bell pepper; sauté for about 5 minutes until tender.
  2. Stir in diced chicken and jalapeño. Season with cumin, paprika, salt, and pepper. Cook until chicken is thoroughly cooked, about 7-10 minutes.
  3. Preheat another skillet over medium heat. Place one tortilla in the pan.
  4. On half of the tortilla, add a portion of the chicken mixture and sprinkle with cheddar cheese. Fold the tortilla in half.
  5. Cook for 2-3 minutes on each side until golden brown and cheese melts.
  6. Repeat with remaining tortilla and filling.
  7. Cut quesadillas into wedges and serve hot with sour cream and salsa.
