  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 avocado, diced
  • ½ cup fresh cilantro, chopped
  • Corn tortillas, cut into strips
  • 1 cup shredded cheese (optional)
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (about 5 minutes).
  2. Add garlic, red bell pepper, and jalapeño; cook for another 3 to 4 minutes until tender.
  3. Stir in black beans, diced tomatoes, vegetable broth, cumin, smoked paprika, chili powder; season with salt and pepper.
  4. Bring to a boil; reduce heat and simmer for 20 minutes.
  5. Meanwhile, fry tortilla strips in a separate pan until crispy; set aside.
  6. Serve soup in bowls topped with avocado, cilantro, tortilla strips, cheese if desired, and lime juice.
