  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 jalapeño peppers, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 tablespoon apple vinegar
  • 1 tablespoon vanilla extract (alcohol-free) (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  2. Stir in the minced garlic, bell pepper, and jalapeño peppers, and cook for an additional 3-4 minutes until the vegetables are tender.
  3. Add the ground beef to the pot, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix well to combine.
  5. Pour in the beef broth and apple vinegar, bringing the mixture to a simmer.
  6. Reduce the heat to low and let the chili simmer uncovered for at least 30 minutes, stirring occasionally. For a deeper flavor, simmer for up to 1 hour.
  7. If desired, stir in the Vanilla Extract (Alcohol-Free) during the last 5 minutes of cooking for added complexity.
  8. Taste and adjust seasoning as needed before serving.
