  • 1/8 teaspoon ground cardamom
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium ripe pears (peeled and diced, about 1 1/2 cups)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk the flour, baking powder, baking soda, salt, and spices together. Set aside.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Gradually mix in the dry ingredients alternately with the milk until just combined; do not overmix.
  6. Gently fold in the diced pears.
  7. Fill muffin cups about two-thirds full with batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean from the center.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
