  • 1/2 cup whole milk
  • 1/2 cup water
  • 2 tsp dry active yeast
  • 410 grams bread flour (2 1/2 cups plus 3 tbsp)
  • 1/3 cup packed brown sugar
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp unsalted butter (melted)
  • 2 cups warm water
  • 2 tbsp baking soda
  • 6 tbsp melted unsalted butter (for dipping)
  • Coarse pretzel salt (for topping)

Instructions

  1. Heat milk and water to 105°F. Stir in yeast and let it proof for 5 minutes.
  2. In a large bowl, mix flour, sugar, salt, baking powder, and melted butter. Add the proofed yeast mixture and knead until dough forms a slightly tacky ball.
  3. Lightly grease the dough with oil and let it rise in a warm place for 45 minutes.
  4. Preheat oven to 410°F. Prepare a baking soda solution by dissolving baking soda in warm water.
  5. Cut the dough into 6 equal strips and roll each into a rope (35 to 40 inches long). Twist into pretzel shapes and dip in the baking soda solution.
  6. Place pretzels on a parchment-lined sheet pan, sprinkle with salt, and bake for 7-8 minutes.
  7. Brush with melted butter while warm and serve.
