  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g apples (about four medium), peeled and diced
  • 30g unsalted butter (for filling)
  • 80g granulated sugar (for filling)
  • 1/2 tsp ground cinnamon (for filling)
  • 1/4 tsp kosher salt (for filling)
  • 1 Tbsp cornstarch (for filling)
  • 125g pecan halves
  • 190g unsalted butter (for topping)
  • 280g brown sugar (for topping)
  • 2 Tbsp + 1 tsp ground cinnamon (for topping)
  • 1/8 tsp kosher salt (for topping)
  • 115g unsalted butter (for frosting)
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. In a bowl, combine lukewarm milk and sugar; sprinkle yeast on top and let sit until foamy.
  2. In a large mixing bowl, mix the yeast mixture with eggs and salt. Gradually add flour and softened butter until a dough forms.
  3. Knead the dough on a floured surface until smooth, then let it rise until doubled in size.
  4. Meanwhile, cook diced apples with butter, sugar, cinnamon, salt, cornstarch until soft; stir in pecans.
  5. Roll out the dough into a rectangle, spread with brown sugar mixture, and evenly distribute apple filling.
  6. Roll tightly and slice into individual buns; place them in a greased baking dish.
  7. Let rise again until puffy; bake at preheated oven for about 25 minutes or until golden brown.
  8. For frosting, beat together cream cheese, softened butter, powdered sugar, heavy cream and salt until smooth.
  9. Drizzle over warm cinnamon rolls before serving.
