Bright and refreshing, this Simple Peach Feta Salad perfectly balances the sweetness of ripe peaches with creamy feta, peppery greens, and crunchy candied nuts. Drizzled with a light honey-balsamic dressing, it makes for an ideal summer dish or a delightful side for any occasion.

Ingredients

  • 4 ripe peaches, sliced
  • 4 cups mixed greens (arugula, spinach, baby kale)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup candied pecans or walnuts
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Wash and slice the peaches into wedges or rounds.
  2. In a large bowl, mix the mixed greens, sliced red onion, and fresh basil leaves.
  3. Layer the peach slices on top of the greens and onion.
  4. Evenly sprinkle crumbled feta cheese over the salad.
  5. Add candied pecans or walnuts for crunch.
  6. Whisk together olive oil, honey, balsamic vinegar, salt, and pepper in a small bowl; adjust seasoning as needed.
  7. Drizzle the dressing over the salad just before serving.
  8. Toss gently to combine all ingredients.
