Rustic No Knead Rosemary Garlic Bread is the perfect homemade bread for those who want to skip the kneading process. Ingredients

  • 3 ½ cups all-purpose flour
  • 1 ½ cups warm water
  • 1 tsp instant yeast
  • 2 tsp salt
  • 4 cloves roasted garlic, mashed
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp olive oil
  • Cornmeal or flour (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30–40 minutes until soft.
  3. Let cool, then squeeze out the roasted garlic cloves and mash them.
  4. In a large bowl, mix flour, salt, and yeast.
  5. Stir in the roasted garlic, chopped rosemary, and warm water until a sticky dough forms.
  6. Cover with plastic wrap and let rise at room temperature for 12–18 hours until doubled in size.
  7. Lightly flour your surface and shape the dough into a ball (do not knead).
  8. Place on parchment paper, cover with a towel, and let rest for 30 minutes while the oven preheats.
  9. Preheat oven to 450°F (230°C) with a Dutch oven inside for 30 minutes.
  10. Carefully transfer the dough (with parchment) into the hot Dutch oven and cover with the lid.
  11. Bake for 30 minutes covered; then remove the lid and bake an additional 10–15 minutes until golden brown.
  12. Cool on a wire rack for at least 20 minutes before slicing.
