  • 2 large baking potatoes, washed and cubed
  • 200 g block of feta cheese
  • 2 tbsp olive oil, divided
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic, top sliced off
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20 g fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the cubed potatoes with 1 tablespoon of olive oil, thyme, oregano, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet. Place the block of feta and head of garlic (cut side up) in the center.
  4. Drizzle the remaining olive oil over the feta and garlic. Add the lemon quarters around the potatoes.
  5. Roast for about 50 minutes until potatoes are golden and crispy.
  6. Remove from oven; drizzle honey over feta and garlic before serving.
  7. Garnish with chopped basil.
