  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic; sauté until softened.
  2. Stir in celery and carrot; cook for about 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Add quinoa, corn kernels, coconut milk, smoked paprika, thyme, salt, and pepper.
  4. Reduce heat and simmer for about 25 minutes or until quinoa is cooked.
  5. Serve hot, garnished with fresh parsley.
