Ingredients

Scale
  • 1 ½ lbs boneless skinless chicken thighs, cut into bite-sized chunks
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • ½ tsp curry powder
  • 1 tbsp Greek yogurt
  • 3 tbsp vegetable oil
  • 3 tbsp butter (divided)
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 tsp sugar
  • ½ tsp black pepper
  • 2 cups heavy cream
  • ½ tsp cayenne pepper (optional)
  • 1 tsp garam masala
  • Fresh parsley (for garnish)

Instructions

  1. Marinate the chicken: Combine chicken, salt, garlic powder, paprika, curry powder, and Greek yogurt in a bowl. Let marinate for at least 15 minutes.
  2. Cook the chicken: In a skillet, heat oil over medium-high heat. Add marinated chicken and cook until golden brown (8-10 minutes). Remove and set aside.
  3. Prepare the sauce: Reduce heat to medium, add butter to the skillet, then sauté garlic and onion until translucent.
  4. Build the sauce: Stir in tomato sauce and sugar; simmer for 2-3 minutes before adding chicken back into the skillet. Pour in heavy cream and stir until combined.
  5. Season and simmer: Add cayenne (if desired), garam masala, curry powder, and black pepper. Simmer on low for 10 minutes.
  6. Finish with butter: Stir in remaining butter until melted for a silky finish.
  7. Serve hot with naan and rice.
