  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/3 cup pumpkin puree

Instructions

  1. Chill dough in the fridge for 30 minutes for chewy cookies.
  2. Remove excess moisture from pumpkin by placing it in paper towels on a plate and folding them over.
  3. In a small bowl, mix flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. Beat butter and sugars together for 1-2 minutes until creamy.
  5. Stir in pumpkin puree until well combined.
  6. Gradually add dry ingredients until thick dough forms.
  7. Use a cookie scoop to form balls (about 3 tbsp), roll them in your hands, and refrigerate for another 30 minutes.
  8. Preheat oven to 350°F and prepare a lined baking sheet.
  9. Roll each ball in sugar and place them on the baking sheet, spaced 2 inches apart.
  10. Bake cookies for 15-19 minutes until edges are slightly golden; cool on the baking sheet for 15 minutes before transferring to a rack.
