  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (approximate)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a bowl, beat the eggs and brown sugar until frothy. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix briefly.
  3. Combine dry ingredients and fold into the wet mixture until just combined; avoid overmixing.
  4. Bake for about 25 minutes, then cover and bake for an additional 20 minutes or until a toothpick comes out slightly moist. Let cool.
  5. For the glaze, whisk powdered sugar with milk and maple syrup until smooth; adjust milk for desired consistency before spreading on the cooled cake.
