  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup chopped pecans
  • 1 1/2 cups hot water

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart casserole dish.
  2. In a bowl, sift together all-purpose flour, pastry flour, baking powder, salt, granulated sugar, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until combined.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined. Spread the batter evenly in the greased dish.
  5. For the topping: mix granulated sugar, brown sugar, and cinnamon in a bowl; fold in chopped pecans and sprinkle over batter.
  6. Carefully pour hot water over the topping without stirring.
  7. Bake for about 40 minutes or until set in the center.
  8. Cool for at least 5 minutes before serving; enjoy with vanilla ice cream if desired.
