  • 1 ½ cups powdered sugar
  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • 1 cup fresh peaches (pureed)
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Additional powdered sugar for filling

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl. In another bowl, whip egg whites until foamy, gradually adding granulated sugar until stiff peaks form.
  3. Gently fold the dry ingredients into the whipped egg whites until fully combined.
  4. Pipe small circles onto the prepared baking sheets and let them rest for 30 minutes to form a skin.
  5. Bake macarons for 15-18 minutes until firm but slightly soft when pressed. Allow to cool completely.
  6. For the filling, whip heavy cream with powdered sugar and vanilla extract until fluffy, then fold in pureed peaches.
  7. Sandwich the filling between two macaron shells and enjoy!
