One-Pot Kielbasa Mac and Cheese is a creamy, comforting dish that combines tender elbow macaroni with rich cheddar cheese and perfectly browned kielbasa sausage. This easy recipe is perfect for busy weeknights or cozy family dinners, allowing you to whip up a hearty meal in just one pot.

  • 1 tablespoon olive oil
  • 14 oz kielbasa sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Add kielbasa and cook for 4-5 minutes until browned; set aside.
  2. In the same pot, sauté minced garlic for 30 seconds.
  3. Add pasta, chicken broth, milk, smoked paprika, black pepper, and salt. Stir well and bring to a gentle boil. Cover and simmer for 8-10 minutes until pasta is tender.
  4. Reduce heat to low and stir in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  5. Return kielbasa to the pot and heat for another 1-2 minutes.
  6. Garnish with parsley or green onions if desired.
