  • 1 lb baby potatoes
  • 2 tbsp olive oil
  • Salt (to taste)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup turkey bacon bits
  • 1 tbsp chopped chives

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Clean and dry the baby potatoes. Place them on a baking sheet and drizzle with olive oil and salt.
  3. Rub the olive oil and salt evenly into the potato skins.
  4. Bake for 20-30 minutes until fork-tender.
  5. Allow to cool slightly, then cut a V-shape into the top of each potato and scoop out some filling.
  6. Fill with shredded cheddar cheese first, allowing it to melt slightly.
  7. Top with turkey bacon bits and sprinkle with chives before serving.
