  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

Instructions

  1. In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper. Stir until well mixed.
  2. Lay one tortilla flat. Place one-fourth of the filling mixture onto half of the tortilla.
  3. Fold the tortilla over to cover the filling.
  4. Heat a large skillet or griddle over medium heat. Add olive oil and let it heat up.
  5. Place the filled tortilla in the pan and cook for 3-4 minutes per side, pressing gently with a spatula to ensure even melting and browning.
  6. Remove from heat, allow to cool slightly, then slice into wedges and serve.
