Mediterranean Chicken Tacos are a delightful fusion of flavors, featuring tender lemon garlic marinated chicken nestled in warm pita bread. These tacos are generously topped with fresh cucumber tomato salsa, creamy feta cheese, and refreshing tzatziki.   • 1 lb boneless skinless chicken breast (cut into 1-inch chunks)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (plus zest)
  • 2 garlic cloves (minced)
  • 2 tsp oregano
  • 1/2 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 whole wheat pitas (thin)
  • 1 cup Persian cucumbers (chopped)
  • 1 cup cherry tomatoes (chopped)
  • 1 cup red bell pepper (chopped)
  • 1/4 cup red onion (diced)
  • 2 tbsp parsley (chopped)
  • 1/2 cup feta cheese (crumbled)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/2 cup tzatziki

Instructions

  1. In a large bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken pieces and marinate for at least 15 minutes.
  2. Prepare the Mediterranean salsa by combining cucumbers, tomatoes, bell pepper, red onion, parsley, feta cheese, lemon juice, salt, and pepper. Drizzle with olive oil if desired.
  3. Heat a skillet over medium-high heat. Cook chicken in a single layer for about 3-5 minutes until golden; flip and cook for another 3-4 minutes until fully cooked.
  4. Warm pitas on a griddle. Fill each pita with chicken, Mediterranean salsa, and a dollop of tzatziki.
