  • 4 whole fish fillets (snapper or cod)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat the fish fillets dry and season with salt, black pepper, and oregano on both sides.
  4. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, about 5 minutes; add bell pepper and zucchini until tender. Stir in garlic for an additional minute.
  5. Spread sautéed vegetables in the baking dish and place seasoned fish fillets on top.
  6. Top with cherry tomatoes, parsley, dill, lemon juice, and zest.
  7. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until fish flakes easily.
