  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1/2 cup warm water
  • 1 tsp active dry yeast
  • 1 tbsp sugar
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tbsp fresh thyme
  • 1 tbsp olive oil (for drizzling)
  • 1 tbsp honey
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. In a bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  2. In another bowl, combine flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 to 1.5 hours until doubled.
  4. Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  5. Punch down the dough and roll it into a thin round (12 inches). Transfer to parchment or pizza peel.
  6. Mix ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl; spread over the dough.
  7. Sprinkle with thyme and carefully transfer to the preheated oven.
  8. Bake for 10-12 minutes until crust is golden and cheese is bubbling.
  9. Drizzle with olive oil and honey; add red pepper flakes if desired.
  10. Cool slightly before slicing and serving.
