  • 1 lb flank steak
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes (optional)
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, julienned
  • 1 avocado, sliced
  • 2 green onions, chopped
  • Sesame seeds for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a bowl, whisk together soy sauce, sesame oil, brown sugar, garlic, ginger, rice vinegar, and red pepper flakes until the sugar dissolves.
  2. Marinate the flank steak in the mixture for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Rinse uncooked rice under cold water and cook according to package instructions.
  4. Preheat a grill pan or skillet over medium-high heat. Remove steak from marinade and discard marinade.
  5. Cook steak for about 4-5 minutes on each side for medium rare; adjust time for desired doneness.
  6. Let the steak rest for 5-10 minutes before slicing against the grain.
  7. Assemble bowls with a base of rice topped with sliced steak, kimchi, cucumber, carrots, avocado, and green onions.
  8. Garnish with sesame seeds and cilantro if desired.
