  • 2 and 1/4 tsp active dry yeast
  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water
  • 4 and 1/2 cups flour
  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water (for boiling)
  • 2 tbsp baking soda
  • 1 egg (for egg wash)
  • Coarse salt (for topping)
  • Everything but the bagel seasoning (optional)

Instructions

  1. In a stand mixer bowl, combine warm water, yeast, and brown sugar. Let sit for 5-10 minutes until foamy.
  2. Add flour, olive oil, and salt to the yeast mixture. Knead on low speed for about five minutes until the dough is smooth and elastic.
  3. Lightly oil the dough ball, cover it with a damp cloth, and let it rise in a warm place for about an hour or until doubled.
  4. Punch down the dough and divide it into 12 equal pieces. Roll each piece into an 18-24 inch rope and shape into pretzels.
  5. Preheat your oven to 450°F. Boil water with baking soda in a large pot.
  6. Dip each pretzel in the boiling water for 15-30 seconds before placing on a parchment-lined baking sheet.
  7. Brush each pretzel with egg wash and sprinkle with coarse salt and seasoning.
  8. Bake for 10-11 minutes until golden brown.
  9. Cool on a wire rack before serving with your favorite dip.
