  • 1/2 cup creamy peanut butter (for cookies)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1–2 tablespoons milk (as needed)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet ingredients until a dough forms.
  5. Roll dough into balls (about 1 inch), shape into ovals, and press with a fork for the classic crosshatch pattern. Sprinkle lightly with sugar.
  6. Bake for 8–10 minutes until lightly golden; let cool completely.
  7. For the filling, beat together peanut butter and butter until smooth. Mix in powdered sugar and vanilla; add milk one tablespoon at a time to achieve desired consistency.
  8. Spread or pipe filling onto the flat side of one cookie and sandwich with another.
