  • 12 tablespoons cold unsalted butter, diced
  • ½ cup cold heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup
  • pinch of kosher salt (for glaze)

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a bowl, whisk together heavy cream, one egg, and one egg yolk. Reserve the egg white for brushing the scones.
  3. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse to mix.
  4. Add cold butter to the flour mixture and pulse until you have a mix of small and larger butter pieces.
  5. Gradually pulse in the cream mixture until the dough forms a ball but remains slightly wet with visible butter pieces.
  6. Transfer dough to a floured surface; form into a disc and wrap in plastic. Freeze for 30 minutes.
  7. Roll out dough to desired thickness; cut into wedges or strips for mini scones.
  8. Place on prepared baking sheet; brush tops with reserved egg white.
  9. Bake for 20-22 minutes or until golden brown; cool before glazing.
  10. Whisk glaze ingredients together; dip tops of scones in glaze twice for a thick coating.
