  • 175 g baking spread (or unsalted butter), softened
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g unsalted butter, softened (for frosting)
  • 400 g icing sugar
  • 1 tsp vanilla extract (for frosting)
  • 12 tbsp milk (for frosting)
  • Green food coloring
  • Yellow food coloring
  • 150 g tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat the oven to 140C fan/325F/Gas Mark 3 and line a cupcake tin with black cupcake cases.
  2. In a bowl, beat the baking spread and caster sugar together until fluffy (about 5 minutes).
  3. Incorporate the eggs and vanilla extract, mixing well.
  4. Gently fold in the self-raising flour.
  5. Add black food coloring and mix until evenly combined.
  6. Divide the batter into cupcake cases and bake for 25-30 minutes or until a skewer comes out clean. Cool completely on a rack.
  7. Once cool, core each cupcake and fill with lime-colored custard.
  8. For the buttercream, beat together softened butter and icing sugar until smooth, then add vanilla, milk, green, and yellow food coloring until bright green.
  9. Pipe or spread buttercream on top of each cupcake; decorate with candy eyes and green sprinkles.
  10. Store in an airtight container in a cool place; consume within three days.
